The Tavern - Grill & Lounge
Specializing in grilled dishes, ‘The Tavern - Grill & Lounge’ offers an exciting lineup of modern inspired dishes including quality aged meats seared to perfection in our new lava stone broiler grill. Focusing on local ingredients and domestic meats, The Tavern - Grill & Lounge brings new dimensions in flavor and presentation to our signature restaurant.

Enjoy a variety of specialty dishes including “snow aged” beef, matured for 25 days in a natural “Yukimuro” refrigerator.

CHEF’S INTRODUCTION

Toyoki Furuya

Inspired by his uncle’s Western-style restaurant, Toyoki Furuya’s passion to become a chef started at a young age. After graduating from high school, he attended Tokyo Culinary and Confectionery Arts Academy in Shinjuku, later joining the presently Okura Frontier Hotel Ebina in 1995. After spending some time at a local French restaurant, he returned to the hotel industry in 2003 helping to launch the French Kitchen at Grand Hyatt Tokyo and The Peninsula Tokyo Boutique & Café in 2007. In 2010, he took the role of Chef at French restaurant, Victor’s at the Westin Hotel Tokyo, while placing 3rd at the Japanese edition of the prestigious Le Taittinger International Culinary Competition. In 2014, he helped in the launch a French restaurant in Gaien-mae and in 2015 took over as Sous Chef of Piacere at Shangri-La Hotel Tokyo. In April 2018, Furuya joined Andaz Tokyo as Chef of The Tavern - Grill & Lounge. Furuya’s strengths lie in his creativity and ability to showcase uniquely Japanese ingredients. Working closely with Executive Chef Shaun Keenan, The Tavern - Grill & Lounge will continue to offer innovative dishes with an unscripted style of cuisine that embody the Andaz concepts.
