Enjoy a variety of specialty dishes including “snow aged” beef, matured for 25 days in a natural “Yukimuro” refrigerator.
Inspired by his uncle’s Western-style restaurant, Toyoki Furuya’s passion to become a chef started at a young age. After graduating from high school, he learned the basics of cooking at the Tokyo Culinary and Confectionery Arts Academy in Shinjuku, later joining Dai-Ichi Hotel Ebina (presently the Okura Frontier Hotel Ebina) in 1995 to gain experience in Western cuisine. After spending some time refining his skills at a local French restaurant, he returned to the hotel industry in 2003 helping to launch the French Kitchen at Grand Hyatt Tokyo and The Peninsula Tokyo Boutique & Café in 2007. In 2010, he took the role of Chef at French restaurant, Victor’s at the Westin Hotel Tokyo In 2011, Furuya placed 3rd at the Japanese edition of the prestigious Le Taittinger International Culinary Competition. In 2014, he helped in the launch a French restaurant in Gaien-mae and in 2015 took over as Sous Chef of Piacere at Shangri-La Hotel Tokyo, also overseeing operations of the lobby, lounge and in-room dining under the direction of the Executive Chef. In April 2018, Furuya joined Andaz Tokyo as Chef of The Tavern - Grill & Lounge, managing all operations of the hotel’s main dining kitchen. Furuya’s strengths lie in his creativity and ability to showcase uniquely Japanese ingredients especially vegetables. His unscripted style of cuisine, playful presentation and innovative dishes embody the Andaz concepts, bringing originality to the Andaz dining experience.
