Stepping further into the Rooftop Bar on the 52nd floor, an authentic "omakase" experience awaits you at the SUSHI. Enjoy Japanese sake at our intimate eight seat sushi counter and watch as master chefs prepare a traditional sushi course using the freshest seasonal ingredients.
Born in Tokyo in 1973, Eiji Nakamura aspired to become a sushi chef at young age, having grown up around his father’s sushi restaurant in Nakano. After graduating in with a Bachelors of Commerce from Senshu University, Chef Nakamura learned the basics of Japanese cuisine before moving to Montreal, Canada in 1999. Upon returning to Japan, he gained further experience working at his parents' sushi restaurant and at several notable restaurants around Tokyo.
Chef Nakamura moved to Taiwan in 2004, building his career at The Sherwood Taipei Hotel, Shangri-La’s Far Eastern Plaza Hotel, Taipei and JW Marriot Shenzhen. He joined the W Guangzhou in 2013 as Japanese Chef de Cuisine, and was later appointed to Executive Sous Chef in 2019 leading a culinary team of 140, with his team winning numerous accolades including several “Best Restaurant” awards for Japanese restaurant for "I BY INAGIKU". Returning to his hometown in September 2020, Chef Nakamura joins Andaz Tokyo as Chef of the SUSHI. Skilled in Edomae sushi, as well as kaiseki, teppanyaki and robatayaki, Chef Nakamura brings a wealth of experience and knowledge cultivated from his 20+ years’ experience in Japan and overseas. Driven by his passion to delight and entertain guests coupled with his ability to connect with an international audience, Chef Nakamura aims to offer innovative and personalized Edomae sushi experiences that excite the senses.
