Stepping further into the Rooftop Bar on the 52nd floor, an authentic ‘omakase’ experience awaits you at the SUSHI. Enjoy Japanese sake at our intimate eight seat sushi counter and watch as master chefs prepare a traditional sushi course using the freshest seasonal ingredients.
With over 30 years’ experience in Edomae sushi, Toshihiro Watanabe began his apprenticeship in 1985 at a local sushi restaurant in Daikanyama. From 1991, he began working at several famous sushi restaurants in Tsukiji and Shizuoka, joining Grand Hyatt Tokyo’s Roku Roku in 2003, and appointed Sushi Chef at Tankuma-Kitaten Kyoto. In 2017, Chef Watanabe joined Andaz Tokyo’s the SUSHI as Head Sushi Chef.
