Featuring a large selection of fine patisserie and simple savories, the Pastry Shop specialties include eclairs, mini-eclairs and seasonal sweet jars prepared with seasonal and indigenous ingredients. Elegantly packaged baked confectioneries are ideal for gifts, while sandwiches and pastries are also available to go. Join us in our bright, open seating area for a sweet midday break or morning coffee.

PASTRY CHEF’S INTRODUCTION

Normand Jubin

Born in 1995, in the city of Delémont, Switzerland.Coming from a family owning a patisserie shop, Normand was exposed at an early age to the artistry of pastries and sweets. At the age of 16, Normand’s passion in making sweets brought him to study and apply newly acquired techniques at various patisseries in Switzerland.

In 2018, he took on the role of Pastry Chef de Partie at the “Restaurant of the Hôtel de Ville de Crissier”, a 3-star Michelin restaurant in Switzerland that also scored 19 points in prestigious Gault&Millau guide and ranked #1 in the 2016 awards of LaListe. During such time, Normand was fascinated by the ‘Assiette Dessert’, a beautifully presented plate composed of elaborate sweet elements. Thanks to such experience, Normand gained high-level skills as a restaurant pastry chef. From 2021, Normand took the role as Pastry Chef at “Pelagos” at the Four Seasons Astir Palace Hotel Athens and, the following year, he landed in Japan as the Pastry Chef at the “Esterre”, a French fine dining restaurant of the Palace Hotel Tokyo


In December 2023, Normand was appointed Chef Pâtissier and overseeing all operations at Andaz Tokyo Toranomon Hills, including weddings, events and restaurants. Normand is committed to providing guests with unforgettable memories by combining his creativity nurtured in Switzerland, where nature and art blend in unique ways, with the advanced techniques of pastry making. In addition, by adding the essence of gastronomy knowledge, Normand is excited to create sweets filled with originality.
