Crafted with expert skill, enjoy traditional Edomae delicacies prepared before you from our intimate counter seats at the SUSHI. With over 20 years’ experience in Japanese cuisine, head Chef Nakamura brings a wealth of experience and knowledge in Edomae sushi, as well as kaiseki, tempura and teppanyaki from his time working at luxury hotels overseas. “Tora no Tsuki” is a culmination of Chef Nakamura’s passion and creativity, with his skill displayed in each specially curated dish.
Exclusive to this course, “Specialty from the Land” features grilled snow aged Yukimuro beef, a signature dish of The Tavern - Grill & Lounge on the 51st floor. Incorporating the freshest seasonal seafood and ingredients, Chef Nakamura’s 9-course menu varies daily. Taste the seasonality of each ingredient as you move through freshly prepared sashimi, specialties from the land and sea, and a selection of Edomae nigiri sushi. A bowl of rich and savory red miso soup closes the course.
